Getting Creative at Foodies Festival | Chocolate Cupcake Recipe

Last weekend, HLC’s creator and queen of cupcakes, Sarah Wilson-Gibbons made her way to Foodies Festival at Tatton Park, to teach crowds of hungry spectators how to create her signature chocolate cupcakes.

As the glorious sunshine beamed down over the sea of pop up restaurants and street food vendors, Sarah got to work tantalising the tastebuds of a tent full of budding bakers with her fun, informative demo in the Cake and Bake Theatre.

Sarah’s demo also featured the lovely Charlotte White from Restoration Cake!

You can read Charlotte’s blog post here.

So, just what went into Sarah’s signature chocolate cupcakes? Let’s take a closer look:

Chocolate cupcake sponge

6oz Lurpak unsalted butter
6oz caster sugar
6oz self raising flour
1 tbsp Food Thoughts Natural Cacao Powder
1/4 tsp baking powder
1 tbsp vanilla extract
3 free range eggs

Sarah used Food Thoughts Natural Cacao Powder.

White chocolate frosting

Renshaw’s Simply Create Ready to Use Frosting collection is the perfect product for novice home bakers.

Sarah used the Renshaw Simply Create White Chocolate Frosting.

No cupcake is complete without a splash of decoration and Sarah opted for Renshaw’s latest Ready to Roll Fondant Icing flavours.

Renshaw Chocolate and Caramel Fondant.

The cupcakes went down a storm! You can keep up to date with Sarah’s cake adventures by following her on Instagram: @MissHLCupcake.
