Recipe: HLC’s Zillionaires Brownie

Feel like a zillion dollars with our Zillionaires Brownie! The sweet, crumbly shortbread base is topped with a caramel brownie layer, salted caramel buttercream and dark chocolate ganache, sprinkled with gold stars and gold crunch! Here’s everything you need to know to make your very own indulgent treat:

You will need:


1 block room temperature unsalted butter
110g caster sugar
360g plain flour

Brownie batter

246g dark chocolate
1 block unsalted butter
114g plain flour
54g cocoa powder
366g sugar
4 eggs

Salted caramel buttercream

2 blocks room temperature unsalted butter
1700g icing sugar
2 tbsp salted caramel sauce


400g dark chocolate
50ml cream


Jar salted caramel sauce
Gold stars
Gold crunch


Make the shortbread

Pre heat oven to 160 degrees C.

Mix all ingredients together until well combined.

Press into a 12″ square tin.


Make the brownie batter

Melt the dark chocolate and butter together in the microwave/on the hob.

Whisk the sugar and eggs until pale and slightly frothy.

Carefully add in the flour and cocoa powder and combine.

Pour in the melted chocolate and butter, mixing until smooth and glossy.

Carefully layer the brownie batter over the shortbread.


Empty contents of salted caramel sauce jar into a piping bag (this makes it easier to handle).


Pipe 25 blobs of caramel across the brownie, then bake for 45 minutes.



Meanwhile, make the buttercream

Combine ingredients and mix until smooth.

Tip: If you find the buttercream to be a little sloppy, add more icing sugar, if it’s too dry, add a touch more butter.

Ensure the brownie is cooled completely before the next step.

Build your brownie

Using a small pallet knife, cover with smooth layer of buttercream and chill.


To make the ganache, melt the chocolate and cream together and pour over chilled buttercream, smoothing over with a pallet knife – act fast as it hardens quickly!

Sprinkle with gold toppings and set aside – the ganache needs to be completely set before you can cut into the brownie.
